Ingredients for Dulce de Leche Dessert Shots:


250g Lotus Biscoff cookies, crushed

226g cream cheese (softened but still cold)

350g dulce de leche

240g cold heavy cream

20g powdered milk

25g powdered sugar

1/2 tsp clear vanilla



Assembly & Decoration:


350g melted dulce de leche

14 shot glasses (3.7 oz each)

1M piping tip (Wilton)

Step-by-Step Instructions


For the Cookie Base / crust


In a processor or blender, crush the cookies until very fine.


Dulce de Leche Filling


In a bowl, combine the cream cheese and dulce de leche. Beat until smooth, scraping the edges and bottom as needed.


Add the cold heavy cream and beat at medium speed until the mixture forms small peaks, do not overbeat.



Chantilly or Whipped Cream


To get the best results, chill the mixing bowl and beaters in the freezer for at least 30 minutes before whipping.


Combine the cold heavy cream, powdered milk, powdered sugar, and vanilla. Beat on low or medium until soft peaks form and again, don't overbeat. When properly whipped, the cream will hold stiff peaks.



How to Assemble and Decorate Dessert Shots


Layer the dessert in the shot glasses: start with about 1 tbsp of crushed cookies, then dollop on the filling, and repeat (the number of layers is up to your preference, used two in the example-photo).


Use the piping bag fitted with a 1M tip to pipe Chantilly whipped cream on top.


Finish with crushed cookies as garnish



Storage and Make ahead Instructions
